How to Eat Shabu-Shabu in 3 Steps

Prepare the dashi stock and add the vegetables first.

Once the dashi in the pot comes to a boil, first add the vegetables that take longer to cook and the tofu.

Simmering the vegetables first adds umami to the dashi, making the meat even more delicious. If any scum rises to the surface, skim it off frequently with a mesh strainer.

Just “swim” the meat briefly in the broth.

Pick up a slice of meat with your chopsticks and gently swish it back and forth in the boiling broth for 5 to 10 seconds. Once cooked to your liking, dip it into the sauce and enjoy.

To savor the best flavor, please cook only one slice at a time rather than adding many at once. We recommend dipping the meat into our peanut sauce or ponzu, perhaps wrapping it around the vegetables for a perfect harmony of textures.

Finish your meal using the soup, now rich and full of umami.

After enjoying the meat and vegetables, use the remaining flavorful broth to prepare Tsukemen (dipping noodles) for a final, satisfying course.

If the broth has simmered down and the flavor becomes too strong, please feel free to add some hot water to adjust it to your preference.
